Popcorn Granola

Packed with oats, nuts and seeds, this Popcorn Granola is light, crunchy and just a little bit sweet.   If you prefer a slightly sweeter version, feel free to add 1 extra tablespoon of either brown sugar or honey.

Sometimes granola can be a little heavy.  This recipe is the opposite.  It packs a punch with loads of nutrients, but the crispy puffed rice and popcorn make it light and easy to enjoy.

Next is the roasting process.  Here’s how it’s done:

  1. The mixture goes into the oven for 10 minutes
  2. Then comes out for a quick stir
  3. Return it for another 5 minutes
  4. Pull out and stir again, popping it back in for the final 5 minutes – so that’s three rotations.  This means that you get all those goodies evenly baked.

Popcorn Granola

Ingredients

  • 2 cups Popcorn (Popped)
  • 2 cups Rolled Oats
  • 2 cups Puffed Rice
  • 1/3 cup Pepitas
  • 1/3 cup Sunflower Seeds
  • 1/3 cup Brazil Nuts Chopped
  • 1/3 cup Cashews Chopped
  • 1/3 cup Walnuts Chopped
  • 1/2 cup Flaked Coconut
  • 2 tablespoons Coconut Oil
  • 2 tablespoons Honey
  • 1 tablespoon Brown Sugar
  • 2 teaspoons Vanilla Essence

Instructions

  1. Pre heat oven to 160 c

  2. Chop brazil nuts, cashews and walnuts to desired size and place in large bowl.

  3. Add popcorn, pepitas, sunflower seeds, puffed rice, oats and flaked coconut.

  4. Combine coconut oil, honey, sugar and vanilla essence in a small saucepan and place over low heat.  Stir until melted and smooth.  Pour gradually over granola, stir mixture with a spoon as you pour entire contents of saucepan over granola.  Mix until granola is well coated.

  5. Spread a thin layer of granola evenly over lined tray and bake for 10 minutes.  Remove from oven and stir mixture.  Return to oven for 5 minutes.  Remove from oven again, stir through and return to oven for final 5 minutes.  Continue this process with remaining mixture. Allow granola to cool before storing in sealed container or bagging up as gift.

  6. Serve with milk, yoghurt and / or fruit or else package as a gift for someone special.
