Packed with oats, nuts and seeds, this Popcorn Granola is light, crunchy and just a little bit sweet. If you prefer a slightly sweeter version, feel free to add 1 extra tablespoon of either brown sugar or honey.
Sometimes granola can be a little heavy. This recipe is the opposite. It packs a punch with loads of nutrients, but the crispy puffed rice and popcorn make it light and easy to enjoy.
Next is the roasting process. Here’s how it’s done:
- The mixture goes into the oven for 10 minutes
- Then comes out for a quick stir
- Return it for another 5 minutes
- Pull out and stir again, popping it back in for the final 5 minutes – so that’s three rotations. This means that you get all those goodies evenly baked.
The contrasting texture of this Granola creates a moment of bliss with each spoonful. The melt in your mouth popcorn, the crunchy nut pieces and the crispy puffed rice – what a delicious way to start the day.
This is another one of those recipes that’s lovely to share, so package up one or two bags to give to someone special.
