Coconut Ice

Delight a friend with a beautiful gift of homemade Coconut Ice.

  • 4 cups Icing Sugar / Icing Mixture
  • 800 gms Condensed Milk
  • 2 teaspoon Vanilla Essence
  • 10 cups Desiccated Coconut
  • 2 - 3 drops Pink Food Colouring
  • 1 teaspoon Strawberry Flavouring


  1. Line 20 x 30 cm baking tray or plastic container with grease proof paper, allow for paper to overhang edges. 

  2. Add sifted sugar, condensed milk and vanilla essence to large bowl and mix through.

  3. Add desiccated coconut to mixture and mix with hands.

  4. Once well combined, take half the coconut mixture and spread onto lined tray / container. 

  5. Carefully add a tiny droplet of food colouring to the remaining coconut mixture. Mix well to blend in colouring.  Repeat this step until desired shade is achieved.  Spread coloured mixture evenly over white coconut layer and pat down firmly.

  6. Cover and refrigerate for about two hours.

  7. Once set, the coconut slab can be removed from tray / container and sliced into small squares.

  8. Return slices to container and store in fridge or else package up into little gift bags and share with family and friends.
