Popcorn Granola

The contrasting texture of this Granola creates a moment of bliss with each spoonful.  The melt in your mouth popcorn, the crunchy nut pieces and the crispy puffed rice - what a delicious way to start the day.

  • 1/3 cup Brazil Nuts Chopped
  • 1/3 cup Cashews Chopped
  • 1/3 cup Walnuts Chopped
  • 2 cups Popcorn (Popped) Be careful not to add any unpopped corn
  • 1/3 cup Pepitas
  • 1/3 cup Sunflower Seeds
  • 2 cups Puffed Rice
  • 2 cups Rolled Oats
  • 1/2 cup Flaked Coconut
  • 50 grams Coconut Oil
  • 50 grams Honey
  • 25 grams Brown Sugar
  • 2 teaspoons Vanilla Essence


  1. Pre heat oven to 170 c

  2. Chop brazil nuts, cashews and walnuts to desired size and place in large bowl.  Then add popcorn, pepitas, sunflower seeds, puffed rice, oats and flaked coconut.

  3. Combine coconut oil, honey, sugar and vanilla essence in a small saucepan and place over low heat.  Stir until melted and smooth.  Pour 1/2 of the mixture over the granola and stir through with a spoon, repeat this with the remainder of the mixture until granola is well coated.

  4. Spread a thin layer of granola evenly over lined tray and bake for 10 minutes.  Remove from oven and stir mixture.  Return to oven for 5 minutes.  Remove from oven again, stir through and return to oven for final 5 minutes.  Remove from oven and pour into a large baking tray to cool.  Continue this three step process with remaining mixture. Allow granola to cool before storing in sealed container or bagging up as gift.

  5. Serve with milk, yoghurt and / or fruit or else package as a gift for someone special.
